I have the Wüsthof extra wide 8" cook's knife. Lots of knuckle clearance, plenty of handle, full bolster is perfect for pinch grip. It's a beefy sumbitch but still precise. Really nice all rounder!

I bought 1 carbon steel knife and beyond any shadow of doubt I can say that those are not for me. Likelwise, nice looking wood handles, I just far prefer a grippy ergonomic handle because I often deal with fatty/oily meat/food, like charcuterie.
